Delicious and easy!I have been amazed by this flour. I can use it in any recipe that calls for flour (not just "gluten-free" recipes). For example, I made pancakes the other day by searching for "pancake recipe" on google. I chose one that looked tasty and just substituted the wheat flour with this flour 1:1. They turned out amazing. I've since tried it out on making stew, biscuits, cookies, and pot pie. They all worked great!One word of warning, the dough tastes bad before it is cooked (bean flour has a strong flavor before it is cooked). So make sure to scrape as much of the batter off your mixing bowl as possible. Licking the bowl is not pleasant.5Great substitute for wheat-based flour, and worth the extra expenseI make delicious pancakes and biscuits with this chick-pea-based flour and they are gluten-free and healthy. Adding a bit (1/4 teaspoon) of xanthum gum to the recipe is a must or the texture will be unacceptable. Xanthum gum is also gluten-free and one 6-ounce bottle has lasted me over 2 years. You will get an even lighter consistency is you first sift the flour through a strainer, plus you then use a lot less of it. Make sure you get the package with the red label. I was once sent the GF flour with a light blue label, which is the flour made out of rice, not chick peas, and I did not like the results. BTW, check all the offerings for this product because the prices vary widely. Usually I can find it for what averages out to about $6.00 or $6.50 per 22-oz. bag.5Great results ONLY IF you use it with Xanthum Gum powderI tested this GF flour by making pancakes, which I've made hundreds of times before with regular wheat flour. The first thing I noticed was that the consistency of the batter was much thinner (because of no gluten?). Then I tasted them, with no pancake syrup to obscure the flavor. Very disappointing...there is an obvious flavor difference which I do not care for. For pancakes I would have to drown them in syrup to enjoy them, which of course would nullify the whole purpose of substituting gluten-free flour in the first place (I strive to be gluten and sugar-free). UPDATE: UPDATE: I have since made my pancake recipe again, but this time I added the recommended Xanthum Gum to the flour. This time the results were excellent, both flavor and consistency. I would say, DO NOT use this product without adding Xanthum gum to the recipe, or else you will be disappointed. My pancake mix called for 1 cup of flour, so I used 1 cup of this GF flour instead, and mixed in 1/4 level teaspoon xanthum gum powder before finishing the recipe. I was surprised that such a small amount of the xanthum made all the difference in the world.5Good for bread or hearty flavor and texture, not the best for desserts or sweet bakingI've been baking for years, but recently started trying different gluten free flours as alternatives for my gf family and friends. This was my first time using Bob's Red Mill, and for the price it's an excellent product. I've spent easily twice as much ($7-$9) for 22oz of gf flour in the supermarket. I made gf bread, biscuits, and rolls using this flour, and the results for the bread and biscuits was quite good.One thing for which I took a star away: This flour uses a lot of beans, which does give the flour itself a taste of, well, beans. It was a heavier flour, and a heartier texture than I personally like. If you're making bread or baking something that has other strong flavors-like cheese for example, I think it would be masked, but if you're looking to make desserts or something with a neutral or light texture and flavor, I would recommend paying the extra to get King Arthur gf Flour.4My go-to flour!!This AP flour is the best! When there was a celiac diagnosis in my family I went out and bought every individual kind of gf flour and tried making my own mixes with both some hits and misses. I learned a lot but when I came across this mix finally I was thrilled with the way I could consistently substitute it for regular gluten AP flour (plus the appropriate amount xanthan gum) in all my recipes and it's value. In both sweet and savory dishes I have had success. This is my go-to flour!5Awful AftertasteI was super excited to find this gluten-free flour for baking but the aftertaste is vile. It is not palatable at all. I am assuming it is the chickpea flour that gives it a bad aftertaste that cannot be masked by lemon, bananas or even chocolate! On the other hand, the Bob's Red Mill GF Pancake Flour is delicious for all the baking needs! I will be converting back to this. Yuck!1Lacking in flavor and texture, not my favorite brand.Bob's is not my favorite. For super-white items, this will affect the color as it's much more yellow than other gluten-free brands and all-purpose flour. Taste-wise, it's a bit off. I think you can attribute that to the quinoa flour. It just tastes different, and not a very good comparison to regular flour. I think it almost tastes beany. Lastly, while almost all gluten-free flours struggle with texture, I found this one to be especially grainy/gritty. I had to buy this when my local Sam's club stopped carrying Krusteaz, which i prefer more than this brand. Overall, not my favorite, I believe there are better tasting and feeling options.3I keep coming back to this...I have a 17-year-old son with multiple food allergies including wheat, barley, egg, milk, tree nuts, and peanuts. I keep coming back to this because it is priced well and gives good results texturally. It does have a moderately strong bean flavor so I use this mix primarily if I am baking with an even stronger flavor like chocolate, lemon, or pumpkin. In these instances, the bean flavor is undetectable. The trick is to pump up the flavor, like doubling the vanilla, for example. I like how it does not have any added gums so I can add my own based on the type of product I am creating, i.e. cookies vs. cakes. It makes an amazing socca bread as well. I've tried nearly every brand of flour blend and even tried America's Test Kitchen recipe for gluten free flour blend and this is the only blend that keeps my muffins from winding up as hockey pucks.4A picture is worth a thousand words - and is deceptive.A picture is worth a thousand words - beware!This picture of a BAG of Bob's Red Mill baking powder is representing an order that actually consists of EIGHT (8) BAGS! That's in the parenthetical print at the end of the long description. Imagine my surprise when what I thought was an order of 2 bags turned out to be 2 BOXES, each with 4 bags. Needless to say, i now have an order with a highly unusable amount of flour. The portrayal of the product packaging and quantity is highly misleading. And, furthermore, when trying to return the over-order, i discover that the product IS NOT ELIGIBLE FOR RETURN. Another slap in the face.As for the product itself, it is wonderful. I have purchased it many time from my local stores. Unfortunately in my new living area, none of the local stores carry it. Perhaps I should donate my excess to them to sell and make a profit. Perhaps the wonderful, employee-owned Bob's Mill baking company would like to work out a better description of their product offering for the website and regain my trust in them as a company.1One of the bestFinally! I don't have to spend half the day mixing and measuring all the different flours to get a loaf of sandwich bread! I agree with some of the other reviewers that it has a slightly beany aroma while baking...bit of a beany taste too...but very faint, and certainly better than all of the other gluten free AP flours I've ever used. My first loaf with this flour was fine. My son will even eat it. For my next bread making session, however, I think I am inclined to add some extra rice flour to this to further mute the bean like aftertaste in the bread. You will enjoy the smooth texture of the breads you bake with this flour. It is a nice break from the grainy texture of rice flour breads, and it will produce a lighter, softer bread, in my opinion.UPDATE: I've been experimenting with this flour. It's ok for just plain sandwich loaf, but I have fallen in love with adding extra oil or ghee (1 Tbsp), dehydrated, minced onions (2 Tbsp), 1/4 cup extra water, and either 1 clove finely minced fresh garlic or 1 Tbsp. garlic powder. What you get for the extra ingredients is a heavenly smelling, onion-y, garlic-y loaf of bread that works great with sandwiches or as toast. Try this bread, toasted, with a patty melt...YUM!5
